Simply put, this is the best bread baking book I've ever found! Here's why:* All terms are explained and are easy to reference at the front of the book* Chapters all well-organized* Tools and materials needed for your kitchen are listed and explained* Differences of flours are given* Easily understood glossary is included* Baker's Sources contains names, contact information (even online!) and what can be purchased from each of them* Recipes include directions for using both stand mixer and food processor* Variations are given for changing recipes* Explanations of what went wrong and why are helpful* Recipes include around-the-world breads--not only `Jewish' ones* Recipes' results are excellent* Recipes for sweets (such as Black and Whites) are included* `Baker's Secrets' often accompany recipes, giving expert advice* Ingredients lists and directions are easy to follow* Morning Menus (efficiently using your time to turn-out a variety of baked good in a single morning)My dad's father was a European baker. I grew up hearing about his rye bread and especially his raisin pumpernickel. With George Greenstreet's Secret's of a Jewish Baker, I feel like I'm an apprentice in my grandfather's bakery. Where else will we find a tip for making and using `altus' to enhance our ryes and pumpernickels? My rye has lacked the depth of flavor found in a terrific Jewish rye bread. Now I know why! This book is to bread baking what the Cake Bible is to cake baking. There is no better authority. The similarities end there. It's easy to read, easy to understand, easy to use. It's not intimidating at all. Even a friend who had a bakery supply business is impressed with this book.I spent many months searching for one outstanding book for bread recipes. I bought this one. I'm not disappointed with my purchase.

I'm somewhat new to bread baking and I found this book to be informative and flexible with its recipes and directions. I started with the King Arthur Baker's Companion, but was a bit discouraged by the lack of variation in the recipes (mostly white wheat flour, lots of dairy, great chemistry review but not as much direction as I needed). This book, on the other hand, lists a white and whole wheat variation for almost every recipe, recommends substitutes to keep the recipes kosher/dairy free, and has a variation for food processor/steel blade and stand mixer for almost every recipe. The chapters include: basic materials, bread making from A to Z, basic yeast bread, corn and potato based breads, breads of all nations, sourdough breads, rolls, biscuits and muffins, quick breads, and twelve menus of baking. I've followed several recipes and have had great success with all. I've been trying to make a 6-braided challah without success for a few weeks now; I had followed written directions and watched videos that helped but always left me hanging mid-braid, but the directions in this book made it so simple to understand that I had it down in minutes. Now I can't see what was so hard about it! Finally, my son can't have dairy or soy, and so the recommended substitutes and notes when a dairy ingredient are optional in a recipe are really helpful.

... what I have managed to produce, following the very clear instructions, has been nothing short of beautifully produced and a feast to the taste buds.As a former professional baker (but not of Greenstein's experience or discipline), I can attest to the quality of care and attention paid in the assembling of not just the recipes included in this offering, but the choices, the descriptive instruction and some of the wonderful humorous asides thrown in for good measure. I will never cut and stipple at the same time -- not that I ever did to begin with.Out West, where I live, it is difficult to get "first clear/common" flour so I have not yet baked the Jewish Rye (NOT caraway or "light"), but I am absolutely convinced it will be everything one expects. As a native New Yorker, and having recently visited and feasted on the varied cuisine, I can tell you that when you bake these recipes, you're going to get a real taste of New York Jewish Bakery fare.I do everything by hand, no machines; I prefer the interaction with the dough, to feel when it's ready at each stage. BUT, if you MUST use a mixer, Greenstein has included modified recipes for you, too. Fact is, in a bakery when you're making 25 loaves or more at a time, you use a machine! But, when you shape the loaf, you gotta use your hands. The bagels, the Potato bread, the challah, the sour dough, the wheat, the everything I've made thus far is everything you should expect from a guy who baked as a kid and then made a career out of it, as he came from the "family" business to make it his own.You really want this book more than any other, trust me.I can't wait for his Pastry book. I salivate just thinking about it. I know it will take me back to New York and the Jewish and Russian bakeries. Ah, I can smell them even now!

Capes: Design Ideas for Renovating, Remodeling, and Building New (Updating Classic America), by Jane Gitlin

From Publishers Weekly

Within the architectural syntax of the American homestead, the Cape Cod house stands as one of our most durable and prolific symbols, writes Gitlin, an architect and a Cape-owner herself. With its "simple one-and-a-half story form" and its steeply pitched roof, often capped with a few dormers, the Cape has long been accepted as a fundamental unit of middle-class comfort and modesty, especially since its proliferation in the decades following World War II. This volume, the latest in the Updating Classic America series, illustrates the many ways in which the basic Cape form has been modified and embellished over the years. "Like a dish of vanilla ice cream," Gitlin writes, "a Cape gracefully accepts just about any flavor you might want to add." In a series of nuts and bolts profiles of successful renovations, Gitlin walks the reader through hidden gardens and storage rooms, along swooping rooflines and angular hallways, always with a competent, conversational tone. Authoritative without being coercive, helpful without nagging, this is a graceful, enlightening handbook for the home redecorator. Copyright 2003 Reed Business Information, Inc.

Both a decorating and an architectural design book, Updating Classic American Capes is a handy reference and idea guide for anyone looking to make changes to an existing cape cod style house. The author shows before-and-after floor plans that illustrate common layout problems and how they can be eliminated. It's easy to apply changes people in this book have made to one's own situation. Issues common to capes--lack of light upstairs, headroom, square footage--are addressed with various solutions, ranging from working within the existing confines of the structure to turning a cape into a colonial, gambrel, etc.Wait...a colonial isn't a cape, you say! No, the title is Updating..., and sometimes the solution to a lack of space is to expand upward. A few of the houses in the book are expanded into full two-stories; some retain the look of a cape through clever use of gables and dormers, while others are completely transformed. But there are plenty of examples of remodels that preserve or even improve the sense of "historic old cape" within the universal House shape. (Yes, the triangle-atop-a-rectangle is how children of almost every culture draw a house.) As a remodeler, I fold over the corners of pages that will be of particular value to me for future reference. Generally, I'll have ten or so such corners in a useful book. In my copy of this book, about half of them are folded.Once you've made structural changes to your cape, you can use this book for the decorating process. It covers the various historical periods of the cape and shows how those styles can be adapted to one's own home. This is a great picture book, and you don't really need to read any of the text to enjoy the photos in here--but the book is well-written and informative, too. All around, a wonderful book for would-be/will-be remodelers and Coffee Table Book aficionados alike.

I purchased this book with the idea that I would find some design ideas for practical living in a cape; in particular, bedrooms and closets. The book was published in 2003, my first comment is that every page has a picture and there are 215 pages! I am not certain that I currently agree with the comment on the back cover that this should be a handbook ...I will take the time to read it more thoroughly and may update my review. I purchased this book used and am very happy that I did not pay full retail.

This is a great book for owners of Cape homes looking for ideas on updates. The text explains in layman's terms what makes a house a "Cape" and the essential architectural elements to consider when making changes. The photos and text cover a couple of dozen Cape homes that have been updated. The possibilities for renovations are endless, yet the book presents these in a manner that allows the reader to visualize projects ranging from small to large. Both indoor and outdoor updates are addressed. While not an architectural guide, this book is a good starting point for a Cape owner with expansion or renovation plans in mind.

My husband and I are preparing to remodel a small Cape cottage in Washington State, where we plan to retire. This elegantly written and designed book provided us with loads of inspiration and revealed, through exquisite photography, how others have updated their Capes, retaining classic features, while tastefully opening up interior spaces to reflect the more contemporary tastes of today. Nishball's book is a great addition to our library, and I highly recommend this gem to Cape lovers and to anyone interested in this style and history of architecture.

My son just bought a Cape and was thrilled with all the great suggestions for updating an older home. The book has great photographs and suggestions.

I truly enjoy this book. It starts with a basic history of Capes and then goes on to options that owners have done in updating them. NOTE: some of the changes are MASSIVE, some not so, but either way I enjoyed seeing them. I am mainly looking for smaller homes, additions, renovations, ect. and this book came through there too. I would recommend this book to anyone interested in home ideas and seeing before and after pics.

My husband and i just recently purchase a Cape house and were use to living in less traditional houses....This book gives us so many inspirations on how to make our new house more us! We took it out of the library before we moved in and.....haven't returned it yet! I think it's time to get one of our own! We took out 50+ books but this one was just what we wanted to see sooooo many ideas! Not frumpy - clean lines, open spaces, etc...

Jane Gitlin's book is a pleasure to read -- again and again. My wife and I own a classic Cape. We've spent the past 10 years renovating it, bit by bit. Now we're contemplating a major exterior remodeling project and Jane's book is a treasure trove of excellent ideas. The text and photos offer many creative alternatives to the standard, time-worn designs suggested by many architects and contractors. The book truly renewed our sense of pride in owning a classic Cape. Bravo!

The story and descriptions made you feel as if you were there. I do not live where it snows, so the descriptions of the coldness made me glad that I live in southern California. Looking forward to reading Book 3.

One of my favorite reads. The main character is beautifully portrayed in a historical Japanese venue. The writing is superlative and creates detailed scenes easily envisioned. Best of all, though this is part of a series of books, each stands well on it's own. Try a sample; I'm sure you'll want to read all of it.

This is the second book in the Tales of the Otori series by Lian Hearn. This book picks up where the first left off. Takeo leaves Kaede for training under the mysterious Tribe; whose supernatural abilities Takeo has inherited from his father. As his training concludes, and he is asked to take out certain missions, he must ask himself if his loyalties will lie with the Tribe or with the Otori? Kaede meanwhile is left on her own to return home and see what state her family is in. Kaede struggles to consolidate her power and claim the inheritance she was left in a world that is run by men. This was a fitting second book for this series. It moved along at the steady, descriptive pace of the second book. Although for some reason I found myself getting bored while reading this book. The lush descriptions, while detailed, didn't bring the book to life in the way I hoped they would. I had a little trouble understanding some of the stupid decisions made by Kaede and Takeo along the way. Despite these misgivings, if you liked the first book you must read the second book. It is very much in the same style of the first book and continues the story of Kaede and Takeo. This book definitely builds to a climax preparing you for the war and conflict of the third novel.

Rating System:1 star = abysmal; some books deserve to be forgotten2 star = poor; a total waste of time3 star = good; worth the effort4 star = very good; what writing should be5 star = fantastic; must own it and share it with othersSTORY: From back cover: "Takeo has now been claimed by the Tribe; held by them against his will, he is condemned to work as an assassin. Meanwhile, Shirakawa Kaede must try to unify the domain she has inherited, while fighting off would-be suitors and hoping that Takeo will return to her."MY FEEDBACK:1) You don't really need to read the first book to understand this story because the author does enough reflection and backstory to get a reader up to speed. BUT...it is so much better if you do read Across the Nightingale Floor first.2) The characters of Takeo and Kaede are explored more and we as readers continue our bond and love for them. Kaede plays a much larger role in this book than the first.3) This second/middle book doesn't seem to suffer from middle-book syndrome but continues with the same strength as the first. The first book resolved enough without having to read this book, but this book definitely sets the stage for interesting events to happen in the 3rd book.Very little is resolved in this book. This book was truly the rising action of the series making you feel that the climax is just around the corner and me as a reader anxious to get there.4) The same actors come back to this book to do the voices in this unabridged representation of the book. The acting is very well done and enjoyable throughout.OVERALL: Fantastic continuation. I can't wait till the end of the trilogy!

Grass for His Pillow is the continuation of the Tales of the Otori series about young Takeo. This book resumes where Book One, Across the Nightingale Floor ends. Thankfully, the story continues. The vivid descriptions, the mental portrayal of the scenery in which young Takeo & the heroine, Lady Kaede Shirakawa, find themselves, is vibrant and real. Lian Hearn takes a known world (Japan) and crafts another world just like it in which to set his story. There are many wonderful moments in this story and to tell them here would only lessen the experience. If you love detailed, well worded and unique character portrayal, please enjoy this title today!

I thought this suffered a little from "middle of the trilogy" syndrome. Dramatic events occurred in the first book, along with the introduction of many interesting characters. Here we seem to be in a bit of a holding pattern while everyone catches his breath and waits for the finale.Part of it was due to the overall intended atmosphere of the book. It is winter and everything slows to a halt--with only plans being made for when the snow clears and major campaigns can now be fought. Part is due to the mysterious Tribe--Takeo is amongst them, but only interacts with a few lower-members, whose relationships with him don't change much. And surprisingly little is revealed about them--save that what we have guessed or learned from the first book. I wanted a bit more of a climatic arc to be had with that part of the story, but it was not to be.However, the world remains beautifully, even sublimely rendered. And there is that subtle tension that underlies the events, which pulls the reader along. I greatly enjoyed the first book and am content with this, the second book, and wait eagerly for the conclusion to this compelling tale.

At this point, I've read all five of these books: the TALES OF THE OTORI trilogy as well as its epilogue and prequel. I read them contiguously and without pause--making sure that, before I finished one book, I had the next in hand. I would recommend the OTORI series for anyone who 1) has a modicum of interest in Japan, 2) likes a breath of magic, 3) enjoys surprise, 4) looks for the quality of nobility in characters, and 5) loves a good read. What's not to like!

This second book starts slow, like breathing in preparation for meditation but it abruptly ends. It left me yearning for more of Hearn's beautiful and tragic narration of love lost and found. I couldn't help but think that the amazing and most terrible moments of Kaede and Takeo's journey are all packed in book three.
